Zucchini Corn Cakes (Excellent)

 

1 cup grated zucchini (I used a little more)

½ cup frozen corn,thawed (I used 1 ear fresh corn cook in microwave)

¼ cup chopped onion (I used a little more)

1 egg (slightly beaten)

1 cup Bisquick

1 tablespoon milk

¾ tsp salt

½ tsp pepper

veg oil for cooking if desired

 

in bowl, stir together zucchini, corn, onion, egg, Bisquick, milk, salt & pepper.

Grease griddle or skillet with oil or use nonstick griddle, heat over medium heat (350 degree) . spoon mixture onto hot skillet (said about ¼ cup for each cake but I used about ½ cup to make them bigger) . Cook until golden brown on both sides.

 

Serve with dollop of sour cream & quartered cherry tomato.  ( did not do this as the cake was delicious just as it was)
