Vidalia Sweet Onion Relish
10 cups chopped sweet onions
2 large bell peppers, chopped
1 hot pepper, chopped (optional)
3 cups sugar
3 cups cider red vinegar
2 teaspoons mustard seed
2 teaspoon celery seed
1 teaspoon turmeric
2 teaspoon Fruit Fresh (keeps from darkening)
Cover onions and peppers with ½ cup salt in ice water for 1 hour. Drain. Mix vinegar, sugar and spices in large pot. Bring to a boil; add onions and peppers. Boil for 10 minutes. Pack in hot sterilized jars and seal. Makes about 6 pints.
