Kolache Fillings

Prune filling
Cook 1 pound prunes in water until soft. Drain prune liquid, remove pits and grind prunes. Add 1 teaspoon vanilla, ¼ teaspoon cinnamon, ¼ cup sugar, and 3 tablespoons cream or prune juice.

Apricot Filling
Cook until tender 2 pounds of dried apricots in water to cover. Drain and mash well. Add 1 cup sugar.

Cottage Cheese Filling
1 pound dry cottage cheese
1 egg yolk
¼ cup raisins
¼ teaspoon salt
¾ cup sugar
cinnamon
¼ teaspoon vanilla or lemon flavoring
Mash together cottage cheese, egg yolk, raisins, salt and sugar. Dust with cinnamon and
mix well. Add flavorings.

Poppy Seed Filling
1 cup ground dry poppy seed
¾ cup milk
½ cup sugar
1 egg
1 teaspoon vanilla
Bring milk to boiling point and add poppy seeds. Cook about 5 minutes, stir carefully until milk is absorbed. Add sugar. Beat egg thoroughly. Mix 1 Tablespoon hot poppy seeds with egg and pour into cooked poppy seeds. Stir until thick over quick heat and add vanilla. This must be thoroughly cooled before using.

Crumb Topping
1/3 cup sugar
1/3 cup flour,
½ teaspoon cinnamon
¼ cup margarine.
Crumble these ingredients together and sprinkle on top of kolach filling, then bake.
