White Bean Salad
2-14.5 oz cans white beans, drained but not rinsed
1/4 C chopped red onion
2 1/2 T vegetable oil
1 T honey
1 T yellow mustard
1 T apple cider vinegar
1 clove garlic, grated or minced
Whisk oil, honey, mustard, vinegar, and garlic to make the dressing. Add the drained beans and chopped onion. Serve immediately, or refrigerate for several hours to allow flavors to come together. Serves eight. Note: Recipe can be halved to serve four.
