Red Cabbage Slaw Recipe

 

4 tsp  red wine vinegar

1 tbsp  Dijon mustard

1 tsp  granulated sugar

1 clove garlic, minced

Pinch each salt and pepper  

1/4 cup extra-virgin olive oil

2 carrots

6 cups  finely shredded red cabbage

2 tbsp chopped fresh parsley

1 cup  thinly sliced radishes .

 

Preparation In large bowl, whisk together vinegar, mustard, sugar, garlic, salt and pepper until sugar is dissolved, about 1 minute.

Whisk in oil until combined.   With vegetable peeler, slice carrots into paper-thin strips.

Add to bowl along with cabbage and parsley; toss to coat. Cover and refrigerate for 2 hours.  

Then stir in radishes just before serving. You can put any kind of dressing you like on this salad
