Rainbow Pasta Salad
3 to 4 C vegetable pasta
2 chopped tomatoes
1/4 C cucumber, sliced
1 C broccoli, chopped
1/2 green pepper, chopped
2 T chopped green onion
Dressing:
1/2 C sugar (I prefer less)
1/3 C olive oil
1/3 C ketchup
1/4 C vinegar
1 tsp salt
1 tsp paprika
Cook pasta according to instructions on package. Do not overcook. Cool. Mix dressing ingredients and then mix with pasta and vegetables. Refrigerate and serve cold. Serves 8-10.
