Potato Dumplings
3 cups potatoes, cooked and riced (smashed)
2 whole eggs
3 Tablespoons farina (cream of wheat)
1 Tablespoon salt
2 cups flour, approximate
Prepare potatoes and cool. When cool, stir in eggs, farina, salt and flour. Mix well and roll into a log; cut 2 inches apart or shape into balls. Put into half kettle of boiling water. Boil for 15 minutes. (Can be served with sauerkraut or great for chicken and dumplings.
