Pea Salad
1-16 oz package of frozen peas (slightly thawed)
1 C chopped fresh celery
1/4 C red onion, chopped
6 slices of bacon, cooked, drained and crumbled (or 1/2 C real bacon bits)
3/4 C ranch dressing
salt and pepper to taste
1/2 C salted cashew or dry roasted peanuts
Combine first five ingredients in a large bowl; mix well. Gently fold the dressing into pea mixture. Add salt and freshly ground black pepper. Refrigerate until ready to serve. Mix in cashews or peanuts just before serving so they remain crunchy.
