Asparagus Pasta Salad
16 oz pasta
2 C asparagus pieces
1 C cherry tomatoes (quartered)
1/2 C thinly sliced onion (or pickled red onions)
1/2 C shaved Parmesan cheese
ground black pepper
1 T chopped fresh parsley
1 C buttermilk ranch dressing (I used my homemade Buttermilk Ranch Dressing)
Boil a large pot of water and cook the pasta for ten minutes. After ten minutes, add the asparagus pieces to the pot and continue boiling for ten minutes. Strain and run cold water over the pasta and asparagus until cool. Drain the pasta and asparagus very well, then transfer to a large bowl. Add the tomatoes, onion, Parmesan cheese and parsley to the bowl and toss well. Add the ranch dressing and mix until all the pasta is covered with dressing evenly. Refrigerate until ready to serve.
