Heirloom Tomato Salad Recipe
red-leaf lettuce or other greens
2 red medium-sized tomatoes
2 yellow medium-sized tomatoes
2 orange medium-sized tomatoes
1 C grated mozzarella cheese
1/2 C extra virgin olive oil
1/4 C balsamic vinegar
salt and freshly ground pepper to taste
Divide the lettuce between four plates. Slice the tomatoes and arrange them on the beds of lettuce. Sprinkle with mozzarella cheese. Mix the oil and vinegar together and drizzle over the salads just before serving. Sprinkle with salt and pepper.
