Strawberry Pizza Deluxe
Crust
2 C of all-purpose flour
3 tsp of baking powder
1/2 tsp of salt
1 C (2 sticks) of butter – unsalted
*optional – nuts – crushed or chopped into small bits
First layer
8 oz of cream cheese
3 C of powdered sugar
12 oz of Cool Whip
Top layer
1 C sugar
1 C water
3 T cornstarch
1 small box of strawberry Jell-O
2 pt of fresh strawberries, sliced
Mix flour, baking powder, and salt. Melt butter and mix with flour mixture. Press into a deep round baking pan or pizza pan. Bake at 350 degrees for about 12 minutes or until done. Blend cream cheese and sugar until smooth. Fold in Cool Whip. *If using a shallow pan, pull the cheese up on the sides so the filling will not run out. In a saucepan over med/high heat, mix water, sugar, and cornstarch. Bring to a boil and cook until clear. Add Jell-O and mix, cool completely, for at least 30 minutes. Add strawberries and spread mixture over the top of cream cheese. Chill in the refrigerator for an hour or more before cutting.
