Stir and Bake Bars
1 C flaked coconut
1/2 C quick-cooking oats, uncooked
1/2 C packed brown sugar
1/3 C vegetable oil
1/3 C water
2 large eggs, lightly beaten
1-16.25 oz pkg chocolate cake mix
1/4 C chopped pecans
1 T granulated sugar
Preheat oven to 350 degrees. Coat a 9 x 13-inch baking dish with cooking spray. In a large bowl, combine coconut, oats, brown sugar, oil, water, eggs, and cake mix; pour into baking dish. In a small bowl, combine pecans and granulated sugar; sprinkle evenly over batter. Bake 25 to 30 minutes, or until golden. Cool in pan on a wire rack. Cut into bars.
