Stir & Drop Sugar Cookies

2 eggs
2/3 C oil
2 tsp vanilla
1 tsp lemon rind
3/4 C sugar
2 C flour
2 tsp baking powder
1/2 tsp salt

Beat eggs, mix in other ingredients till well combined. Drop onto ungreased cookie sheet. Flatten with greased glass dipped with sugar. Bake in a 400-degree oven for eight to ten minutes.
