Rhubarb Cake
Ingredients:
- 4 1/2 cups rhubarb, chopped
- 3/4 cup sugar
- 1 teaspoon cinnamon
- 1 small package strawberry flavored gelatin powder
- 1 517g (18.25 oz) package of yellow or white cake mix
- 1/2 cup butter, melted
- 3/4 cup water
Method:
- Place chopped rhubarb evenly in an ungreased 9 x 13 inch baking pan.
- Mix sugar and cinnamon and sprinkle over rhubarb.
- Next sprinkle strawberry gelatin powder on top of the sugar mixture.
- Sprinkle cake mix on top of the gelatin powder.
- Drizzle melted butter on top of the cake mix.
- Pour water over all.
- Bake at 350º for 1 hour.
- Yields: 12 generous pieces
Tip: You can use slightly frozen rhubarb..if you use fresh rhubarb increase water to 1 cup.
