Pistachio Delight Cookies
1 box (18 oz.) white cake mix
1 pkg. (3.4 oz.) instant pistachio pudding
1/2 cup cooking oil
3 tbsp. water
2 eggs
1/2 cup chopped Pistachio nuts
1/2 cup flaked coconut
Combine all ingredients in large bowl and mix until blended well, using large spoon. Drop by teaspoonfuls onto greased baking sheets. Bake at 350º for 10 minutes, or until lightly browned around the edges. A very chewy tasty cookie.
