Pecan Pie Bars

Cookie Crust:
2 ½ cup flour
1 cup cold margarine or butter, cut in pieces
½ cup sugar
½ teaspoon salt
Preheat oven to 350 degrees. Spray 15 X 10 X 1” pan. With mixer on medium speed, beat flour, margarine or butter, sugar and salt. Mix until mixture resembles fine crumbs. Press firmly into pan. Bake 20-30 minutes until golden brown.

Filling:
4 eggs
1 ½ cup corn syrup
1 ½ cup sugar
1 ½ teaspoon vanilla
3 Tablespoons butter or margarine, melted
2 ½ cup pecan halves or coarsely chopped
In large bowl, beat eggs, corn syrup, sugar, butter and vanilla until well blended. Stir in pecans. Pour over hot crust. Spread evenly. Bake 25 minutes or until filling is firm around the edges and slightly firm in the center.

Cool completely. Cut into 2 X 1 ½” bars. Makes about 48 bars.
