Peanut Butter Cupcakes
1 pkg. yellow cake mix
1 C water
1/2 C evaporated milk
1/2 C peanut butter (I use smooth)
2 eggs
Chocolate Frosting
1 C (6 oz) semi-sweet chocolate chips
1/3 C evaporated milk
1-1/2 C powdered sugar
In bowl for electric mixer, combine dry cake mix with water, milk, peanut butter, and eggs; beat at medium speed for two minutes. Divide batter into paper lined muffins tins. Bake at 350 degrees for about 20 minutes, or until toothpick inserted in the center comes out clean. Cool well and frost. Makes 24 delicious cupcakes.
For frosting:
In small saucepan, over low heat, combine chocolate chips and milk. Stir constantly until mixture is smooth and thick. Remove from heat, and beat in powdered sugar until smooth. If frosting is too thick, add more evaporated milk.
