Outrageous Oatmeal Cookies
1/2 C butter, at room temperature
1 C dark brown sugar, packed
1/2 C granulated sugar
2 large eggs
3 C old fashioned oats (not quick cooking)
1 C all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp cinnamon
2 tsp vanilla
1/2 C dark raisins
1/2 C golden raisins
1/2 C dried cranberries
1/3 C dark raisins, for topping
1/3 C golden raisins, for topping
Preheat oven to 350 degrees. Beat butter and sugars until light and fluffy. Add eggs and vanilla; beat until combined. Gradually add flour, baking powder, baking soda, cinnamon, salt, and oats. Add raisins and cranberries. Combine raisins for topping in separate bowl and set aside. Drop dough by rounded tablespoons (or use ice-cream scoop), two inches apart on lightly greased baking sheets. Place one mounded teaspoon of raisins on top of each cookie. Bake about 12 minutes, until cookies are golden brown, but still soft. Cool on sheets before serving. Makes about three dozen large, chewy cookies.
