Oatmeal Pie
1 pie crust
1/2 C (one stick) unsalted butter, melted
1/4 C firmly packed brown sugar
2 eggs
3/4 C light corn syrup
3/4 C rolled oats
Preheat the oven to 350 degrees. Make your favorite pie crust (or buy one), roll out chilled crust and place in a pie pan. Flute edges. In a medium mixing bowl, combine melted butter, sugar and eggs. Add corn syrup, and oats and combine. Pour into pie shell and bake for one hour until thickened inside and golden brown on top.
