Mother’s Applesauce Cake

2 cups brown sugar

2 eggs

1 Tablespoon cinnamon

½ teaspoon cloves

½ cup shortening

1 teaspoon nutmeg

2 cups flour

2 cups applesauce

1 teaspoon baking soda

1 teaspoon pure lemon extract

1 cup raisins

Nuts optional

Mix applesauce and soda in a small bowl, let set.  Cream sugar, eggs  and shortening together.  Sift dry ingredients together and add to creamed mixture, mix and add applesauce and spices, mix.  Stir in raisins and nuts and pour into a greased and floured 9x 13 pan, bake 350 degrees for 30 minutes.
