Mom’s Caramel Frosting 2013

2 cups brown sugar
½ cup butter or margarine
½ cup milk
2 teaspoons vanilla
Bring brown sugar, butter and milk to boil. Cook until mixture form firm ball stage (245- 250 degrees). Remove from heat and add vanilla. Beat with spoon until cool and ready to spread on cake. If frosting is too firm, add small amount of milk and mix until desired consistency. NOTE: You may substitute 2 cup cream for milk and butter.
Mom’s Chocolate Frosting: Prepare same a s Caramel Frosting substituting 4 Tablespoons cocoa and 2 cups granulated sugar for brown sugar.
Mom’s Cooked White Frosting: Prepare same as Caramel Frosting substituting 2 cups granulated sugar for brown sugar.
