Magic Lemon Cobbler 

1/2 C (1 stick) unsalted butter 
1 C all-purpose flour 
1 1/2 tsp baking powder 
1/4 tsp salt 
1 C granulated sugar 
1 C buttermilk 
1 T vanilla extract 
1 T lemon extract 
21 oz can lemon pie filling 

Preheat your oven to 350 degrees. Place the butter in a 9x9-inch baking dish and melt it in the oven for about three to four minutes. Remove and set aside. In a bowl, mix the flour, baking powder, and salt. Add the sugar and mix again. Stir in the buttermilk, vanilla extract, and lemon extract until just combined. Pour the batter over the melted butter in the baking dish. Do not stir. Drop dollops of the lemon pie filling over the top. Bake for 45 to 55 minutes until the edges are golden. Let the cobbler cool slightly before serving and enjoy its magic!
