Lemon Zucchini Bars
2 cups sugar
1 cup oil
3 eggs
2 teaspoons lemon peel, grated
3 Tablespoons lemon juice
2 teaspoons vanilla
2 cups flour
1 teaspoon salt
2 teaspoon baking soda
¼ teaspoon baking powder
¾ cup quick oats
2 cups zucchini, shredded
1 cup walnuts, chopped
Combine sugar, oil, eggs, lemon peel, lemon juice, and vanilla and stir well. Add flour, salt, baking soda, baking powder and oats. Mix until combined. Stir in zucchini, then fold in walnuts. Spoon batter into greased and floured 12 x 17 jellyroll pan. Bake 20 minutes, in a 375 degree oven until golden brown or until it tests done. Cool in pan. Frost bars when cool.
Cream cheese frosting:
3 ounce package cream cheese, softened
½ cup butter or margarine, softened
2 Tablespoons lemon juice
2 ½ cups powdered sugar
Beat cream cheese and butter or margarine, then add powdered sugar and lemon juice and stir until smooth.
