Lemon Cheesecake Bars
1 box lemon pudding cake mix
3 eggs
1/3 C. vegetable oil
2 (8 oz.) packages of cream cheese
1 C. sour cream
1/2 C. sugar
Zest and juice of 1 lemon, optional
Preparation:
Preheat oven to 350 degrees. Grease bottom of 13 in. x 9 in. x 2 in. pan. Measure 1 cup of cake mix and set aside. Combine remaining mix with 1 egg and oil. Press in bottom of pan. Bake for 10 minutes. Combine reserved cake mix, 2 eggs, cream cheese, sour cream and sugar. Stir in lemon zest and juice. Spread over crust. Bake for 35 minutes. Serve cold or room temperature. Enjoy.
