Fruit Pizza
Crust:
1/2 cup butter
1/2 tsp. baking soda
1/8 tsp. salt
3/4 cup sugar
1 egg
1-1/2 cups flour
1 tsp. cream of tartar
Filling:
1 pkg. (8 oz.) cream cheese, softened
1/4 cup sugar
1 tsp. vanilla
Glaze:
1/4 cup sugar
2 tsp. cornstarch
1/2 tsp. lemon juice
1/2 cup pineapple juice
Mix all crust ingredients well and press into well greased (can use cooking spray) pizza pan. Bake 10 minutes at 400 and cool. Mix filling and spread over crust. Arrange fruit on top. For glaze, cook the 4 ingredients, stirring until thick and then cool.
NOTE: you can use any combinations of fruit you want, sliced kiwi fruit, fresh berries, canned mandarin orange and pineapple tidbits (drained), and also banana slices, etc. Keep in refrigerator until time to serve
