Double Chocolate Zucchini Muffins
1-15.25 oz box Betty Crocker Super Moist Triple Chocolate Fudge cake mix
1/2 C canola oil
1/4 C milk or water
3 large eggs
2 C grated zucchini (about 2 medium or 1 large zucchini)
1 C mini semisweet chocolate chips
Preheat oven to 350 degrees. Line 12 cup muffin pan with cupcake liners; set aside. Combine Triple Chocolate Fudge cake mix, canola oil, milk, and eggs in a large bowl and beat on medium speed for one minute. Fold in zucchini and mini chocolate chips until thoroughly combined. Use a large cookie dough scoop to fill liners about 2/3 full (approximately three tablespoons of batter). Bake 14 to 16 minutes or until toothpick inserted in center comes out clean. Cool three to five minutes in pan before removing to wire rack to cool completely. Store in an airtight container at room temperature up to two days or refrigerate up to five days.
