Coffee Squares
1/3 C butter softened
1 C brown sugar packed
1 egg
1/3 C hot strong brewed coffee
1-1/2 C all-purpose flour
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp salt
1 C (6 oz) semisweet chocolate chips
Glaze
3/4 C confectioners' sugar
1/4 tsp
4 tsp milk
In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and coffee. Combine the flour, baking powder, cinnamon, baking soda and salt; gradually add to creamed mixture. Stir in chocolate chips and optional walnuts. Spread into a well-greased 8-in. square baking dish. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted near the center comes out clean. To make glaze, in a small bowl, combine the confectioners' sugar, vanilla and enough milk to achieve a desired consistency. Drizzle over warm bars. Cool completely on a wire rack before cutting.
