Chocolate Waffle Cookies
1 1/2 c. sugar
1 c. butter
4 eggs
2 tsp. vanilla
2 c. flour
1/2 c. cocoa
Blend sugar and butter. Add eggs one at a time. Add vanilla. Add dry ingredients. Drop dollops on hot waffle iron. Cool.
Frosting:
In saucepan, bring 1 c. sugar, 1/3 c. milk and Tablespoons butter to a boil. Cook for 1 minute. Remove from heat. Add 6 oz. chocolate chips. Whisk until melted and smooth. Drizzle or spoon over cookies. Dust with jimmies, or chopped nuts if desired.
