Cherry Delight
1 1/4 C Oreo crumbs
1/4 C butter, melted
8 oz cream cheese, softened
1 C icing sugar (confectioner's sugar)
1 C whipping cream
2 T powdered sugar
1 tsp vanilla
1 can cherry pie filling (21 oz)
Combine cookie crumbs and melted butter in mixing bowl and stir until well-mixed. Press crumbs into a 9 x 9-inch glass pan. Refrigerate while preparing the filling. Beat cream cheese and powdered sugar with mixer until smooth and creamy. In a separate bowl, beat whipping cream, two tablespoons powdered sugar and vanilla until fluffy and stiff. Add whipped cream to cream cheese mixture and beat until light and fluffy. Spoon cream cheese mixture over the prepared crust. Refrigerate. Spread cherry pie filling over dessert and chill 4 to 6 hours before serving.
