Carrot Cake Bars

 

2 cups flour
2 cups sugar
2 teaspoons baking soda
1 teaspoon salt
4 eggs, slightly beaten
1 ½ teaspoon cinnamon
1 ¼  cup canola oil
1 large jar strained carrots/jr. baby food

preheat oven to 350 degrees.  Combine flour, salt, sugar, carrots, cinnamon, oil.  Add eggs slowly and blend thoroughly.  Spray with nonstick spray and lightly flour a deep sided cookie sheet or jelly roll pan.  Bake for 30-40 minutes until center is done.   Cool completely.  Frost with cream cheese frosting.
