Brookie Bars

For the brownies:
2 C sugar
2/3 C cocoa powder
1 C butter, melted
4 large eggs
2 tsp vanilla
1 1/2 C flour
1/2 tsp salt
For the cookie:
1 1/2 C packed brown sugar
1/2 C butter, melted
2 eggs, beaten
1 tsp vanilla
1 1/2 C all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 C chocolate chips or M & M’s or other flavored chips.
This is a fudgy brownie topped with a chewy chocolate chip cookie. I make the cookie dough first and put It in Frig/freezer, make the brownies, then the topping is easier to work with.
For the brownies: Preheat oven to 350 degrees. Grease a 9 x 13-inch pan. In a large bowl, mix sugar and cocoa. Mex in melted butter, eggs, and vanilla until smooth. Add the flour and sa
lt and mix until just combined. Spread into the greased pan.
For the cookie: Cream the butter and sugars together for two minutes and then mix in the eggs, and vanilla. Add the dry ingredients and mix until combined. Use a wooden spoon to mix in chocolate chips. Scoop out spoonfuls of dough, flatten with your hands and piece together over the brownie batter (or you can put all the dough between two layers of plastic wrap, roll out, and then place over batter.) Sprinkle more chips on top if desired. Bake for 35-40 minutes or until cookie is golden. Let the brookies cool completely before cutting. Awesome with ice cream.
