Banana Bars with Caramel Frosting
1/2 C butter, softened
1 1/2 C sugar
2 eggs
1 C mashed banana (about 3)
1 tsp soda
1/4 C milk
1 1/2 C flour
1 tsp vanilla
Cream together butter and sugar, beat in eggs, add mashed bananas. Use a fork to mash them which worked well. Add remaining ingredients, mix well and pour into a greased 9 x 13-inch cake pan. Bake for 35-40 minutes or until toothpick inserted in center comes out clean. Cool and ice with caramel or cream cheese icing.
Caramel Icing
1/2 C butter
1 C brown sugar
1/4 tsp salt
1/4 C milk
powdered sugar
Place butter and sugar in a small saucepan, heat over low heat until butter is melted. Add milk and salt, bring to a boil. Boil a few minutes then remove from heat, cool slightly before adding powdered sugar to desired consistency. Spread over cooled cake
