Babovka- Bohemian Coffee Cake
3 C flour
1 tsp salt
1 C sweet cream or evaporated milk
3 egg yolks
3 T sugar
1/2 tsp mace
1/2 C butter
1/4 C warm milk with 1 tsp sugar
1 cake yeast or 1 pkg yeast (2 1/2 tsp)
Place flour in bowl with salt and mace. Cut in butter as for pie crust. Beat egg yolks with three tablespoons sugar. Dissolve yeast in ¼ cup milk and one teaspoon sugar. Mix all ingredients (flour, with egg yolks, yeast and cream) Mix well. Refrigerate overnight or at least eight hours. Then roll out on floured board while cold. Spread desired filling scantly over entire area of dough. (Poppy seed is most preferred). Roll as for jelly roll. Place in a tube or Bundt pan. Allow to rise one hour. Bake at 350 degrees for 45 minutes to 50 minutes. Cool completely before removing from pan. Sprinkle with powdered sugar or frost. Yields 12-15 servings.
