Grandma’s corn bread

Ingredients:

2 1/4 c. flour

3/4 c. yellow cornmeal

1/4 c. + 2. Tbsp. sugar

1 1/2 Tbsp. baking powder

3/4 tsp. salt

1 1/2 c. buttermilk, at room temp. or 1 ½ cup milk plus 1 ½ Tablespoons vinegar

1/2 c. butter, melted

3 lg. eggs, beaten. at room temp.  

Directions:

Mix dry ingredients together. In a separate bowl, combine buttermilk, butter and eggs

. Make a well in the center of dry ingredients and pour in milk mixture.

Mix until moist but lumpy (don't over-mix).

Pour into a greased 9x13" pan.

Bake at 425 for 20-25 minutes, or until a toothpick tested in the center comes out cleanly.
