Zucchini Fritters
2 cups shredded Zucchini
1 teaspoon salt
1 grated carrot
1 medium onion, minced
1 egg
½ cup flour
Dash of pepper
2 Tablespoons parsley, fresh or dried
Sprinkle salt on zucchini and let set 15 minutes. Squeeze our excess water and mix together with remaining ingredients. Drop by tablespoon (do not make very thick or large) in ¼” hot oil in heavy fry pan. Brown on both sides.
