Zucchini Bread (Makes 2 Loaves)

3 eggs
1 ½ cups oil
2 cups sugar
1 small can crushed pineapple
3 tsp. vanilla
cream all above together
mix dry ingredients: 3 tsp cinnamon ( made mine heaping)
1 tsp soda
1 tsp salt
3 cups flour
Add dry ingredients to creamed mixture
Add 2 cups zucchini grated w/skins on
Pour into 2 loaf pans that have been sprayed.
Bake 325 degree preheated oven 45-50 minutes (mine took a lot longer)
Until passes tooth pick test
Cool on wire rack about 5 minutes before removing from pan then completely cool on wire rack.
Very moist and delicious. Also freezes well.
