Pumpkin Muffins
4 eggs
2 cups white sugar
1 ½ cups vegetable oil
14 ounce can pumpkin (not pie filling)
3 cups all-purpose flour
1 tablespoon cloves (if you are not a ‘cloves’ lover, change to ½ Teaspoon of cloves)
2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
2 cups raisins
In a large bowl, beat eggs well. Add sugar, oil and pumpkin and mix well. Add remaining ingredients and combine well. Bake for 15 minutes in 400 degree oven. Makes 3 dozen muffins.
