Orange Zucchini Bread
3 C flour
1 1/2 C sugar
1 1/2 tsp baking powder
1/2 tsp soda
1/2 tsp salt
1 whole seedless orange
2 eggs
3/4 C oil
2 C grated zucchini (peeled, if you like)
1 tsp vanilla
1 C nuts, optional
Prepare two small/medium loaf pans or one large 9 x 5-inch loaf pan, by lining with wax and greasing with butter. Alternately you can use just parchment paper. Mix dry ingredients in a large bowl. Peel orange with potato peeler. Remove pith (discard) and divide into segments. Peel and grate zucchini. In blender, put orange, peel, egg, oil, grated zucchini and vanilla. Blend well. Add blended ingredients to dry ingredients and stir. Add nuts if using. Bake at 350 degrees 45 minutes in small pans or 60 minutes in a large pan. Test with toothpick.
