Low Fat Any Fruit Muffins
Stir together:
2 cups all-purpose flour
1/3 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Mix:
1 cup milk (FF is fine)
2 tbs canola oil
1 large egg, lightly beaten
Add wet ingredients to dry ingredients just until incorporated.
Gently fold in until mixed:
1 cup fruit
(blueberries, strawberries, apples, cranberries, raisins, dates, figs, etc). If using canned fruit it should be drained well and patted dry.
Spray or line a 12 muffin tin. Bake 400 oven for 18-20 minutes.
