Green Tomato Bread
1 cup oil
3 eggs, beaten
2 cups sugar (or 1 cup honey)
1 tsp vanilla
2 cups diced green tomatoes
2 cups flour
½ tsp baking powder
¼ tsp baking soda
1 cup chopped nuts
1 cup raisins (optional)
Add oil to beaten eggs, sugar or honey, vanilla and tomatoes.
Add dry ingredients and blend well. Stir in nuts and raisins.
Pour into 2 greased 5 x 9 loaf pans. Bake at 350 degrees for 45 minutes.
(mine took 55 minutes).
This is a moist bread depending on how juicy the tomatoes were. It slices better the next day.
