Cranberry Cream Cheese Muffins
1 c butter, softened
8 oz cream cheese, softened
4 eggs
1 1/2 c sugar
1-1/2 t vanilla extract
2 c flour
1-1/2 t baking powder
1/2 t salt
2 c cranberries, fresh or frozen
1/2 c pecans, chopped
Heat oven 350 degree and spray 24 muffin tins. Beat butter and cream cheese smooth. Add sugar, vanilla, and eggs just until blended. Add dry ingredients and fold in berries and nuts. Spoon into cups and bake 25-30 min. Remove immediately from tins and cool on rack. until just warm.
