Cheesy Zucchini Cornbread

 

3 cups shredded zucchini (let this set for about 10 minutes and it will draw its own liquid)

1 onion, diced

2 eggs, beaten

1 pkg. Jiffy Corn bread mix

½ teaspoon garlic

1 teaspoon oregano

½ teaspoon seasoned salt

½ teaspoon black pepper

½ teaspoon dill weed

12 oz. shredded cheddar cheese (4 oz. is used on top)

 

Mix all together except for 4 oz. for top. (the moisture from the zucchini will be adequate.)  

Sprinkle 4oz. cheese on top.  Put in sprayed casserole dish.  Bake 350 degree oven for 50-60 minutes.
