Carrot Muffins
1 1/2 C of brown sugar (I used 3/4 cup)
1 1/2 C whole wheat flour
1 1/2 C all-purpose flour (I used 1 C spelt & 1/2 C kamut)
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
1 C raisins
2 C grated carrots
2 tsp vanilla
1 1/4 C milk
3/4 C oil (I used 1/2 C)
4 beaten eggs
Combine the first nine ingredients, coating the raisins and carrots well with the flour mixture. In a separate bowl, combine all the wet ingredients. Mix well but do not over mix. Bake in a preheated oven at 375 for 15 to 20 minutes (I did 18).
