Yam Puff
6 C yams (about 4 medium)
2 T butter
2 eggs, beaten
3 T flour
1 T brown sugar
1 tsp baking powder
salt and pepper to taste
1/2 C of Panko breadcrumbs
2 T butter, melted
Put yams on a baking sheet and wrap them in foil and bake them at 350 degrees for an hour or until very done. I slide a sharp knife into the largest one to ensure it is soft enough to mash. After the yam has been measured, mash it really well with a potato masher. Add the butter and eggs. Beat well. (This can be done the day ahead and wrapped and kept cold) Combine the flour, sugar, baking powder, salt, and pepper. Stir into the mashed yams. Butter a flat casserole dish and spread the yam mixture into the pan. Combine the crumbs and butter and sprinkle over the yams. Bake at 375 degrees for about 45 minutes or until golden browned and puffed.
