Turkey Barley Soup
Norma Jones
1 medium green pepper, chopped
1 celery rib, chopped
3 cloves garlic minced
2 cans (one 40 oz. and one 14 oz.) chicken broth
4 cups cubed cooked turkey
2 medium carrots, thinly sliced
1 large potato cubes
2 cup frozen cut green beans
½ cup uncooked barley
2 bay leaves
1 teaspoon dried thyme
1 teaspoon rubbed sage
2 teaspoon salt
Combine all ingredients, bring to a boil, simmer until vegetables are tender, discard bay leaves.
