Roast Cajun Potatoes

 

1 lb baking potatoes

2 Tablespoons fresh parsley, finely chopped

2 Teaspoons canola oil

1/2 Teaspoon garlic powder

1/2 Teaspoon onion powder

1/2 Teaspoon ground red pepper

1/2 Teaspoon dried thyme leaves

1/4 Teaspoon black pepper

 

Preheat oven 400 degrees.

Cut each potato lengthwise into 8 wedges. You may peel them if you like. I leave the skin on mine.

Place on un-greased jelly roll pan.

Toss potatoes with parsley, oil, garlic powder, onion powder, red pepper, thyme and black pepper until evenly coated.

Bake 50 minutes, turning wedges halfway through.
