Hamburger Vegetable Soup Recipe

 

Ingredients

1 lb. ground beef

1 cup chopped onion

1 cup diced potatoes

1 cup sliced carrots

1 cup shredded cabbage

1 cup sliced celery

1/4 cup uncooked rice

2 (1 lb) cans tomatoes

3 cups water (I add a little more if it seems too thick)

4 tsp. salt

1/4 tsp. dried thyme

 1/4 tsp. basil

1/4 tsp. pepper

 

Directions

Brown ground beef and onion; drain fat if necessary.

Add all remaining ingredients, bring to a boil, then turn down, cover and simmer for 1 hour.

It probably makes 8-10 servings, and freezes well.
