Chicken Vegetable Soup

1 pound chicken breast cut into 1 inch cubes

2 cups chicken broth, divided

1 teaspoon Italian seasoning

1 garlic clove, minced

¼ teaspoon paprika

4 small red potato, cut into 1 inch pieces

3 small carrots cut into 1 inch pieces

1 medium onion, cut into wedges

2 Tablespoons chopped celery and leaves

 

2 Tablespoons flour

2 Tablespoons minced fresh parsley

1 ½ teaspoon lemon juice

 

Combine chicken, 1 ¼ cup broth, Italian seasoning, garlic, paprika, bring to a boil, cover, simmer 10 minutes. 

Add rest of ingredients, simmer until vegetables are tender.  Mix and add flour and rest of broth, boil until thickened, stir in parsley and lemon juice.
