Cabbage Roll Soup
1 lb extra lean ground beef
1 C chopped onion
3 cloves garlic, minced
6 C roughly chopped cabbage
2-14.5 oz cans no-salt-added diced tomatoes
1-15 oz can no-salt-added tomato sauce
1/2 C water
2 tsp lemon juice
2 T light brown sugar
1 tsp dried oregano
3/4 tsp dried basil
1/2 tsp salt
1/2 tsp black pepper
1 C cooked rice
In a large skillet over medium-high heat, sauté beef, onion, and garlic for six to eight minutes or until browned. In a-quart or larger slow cooker, place remaining ingredients except rice. Add meat mixture and stir until thoroughly combined. Cover and cook on LOW for seven to eight hours. During the last 15 minutes, stir in rice.
