Sauerkraut Pork Roast
1 boneless pork roast 4-6 lbs
2-15 oz cans sauerkraut
2 onions sliced
1 T caraway seed
1 T cinnamon (I used a little less)
1 C brown sugar
1 C apple juice (or 1/2 C water and 1/2 C applesauce)
Place pork roast into the crockpot and salt top (brown roast prior to this if you like a very brown looking roast). In a bowl, mix all ingredients except onions and spoon this over the roast. Place the sliced onions on the top of the sauerkraut. Cover and cook on low for seven to eight hours or four hours on high. After cooking use a slotted spoon to remove the sauerkraut and serve as a side dish with the pork roast. If using a smaller roast, cut ingredients in half.
